At the heart of Paraguayan cuisine lies corn, cassava (yuca), and meat, which are the pillars of many of its traditional recipes. Cassava, in particular, is a staple ingredient used in a variety of dishes. There's a saying 'more Paraguayan than cassava', used by neighboring countries where this root is also consumed. Iconic Dishes

One of Paraguay's most iconic dishes is the Paraguayan soup, which despite its name, is not a soup at all, but rather a dense cake made with corn flour, cheese, onion, fat, and milk. Another popular dish is the chipá guazú, a kind of corn and cake of chesse salty similar to the Paraguayan soup but moister in texture.

Meat also plays a leading role in Paraguayan gastronomy, being rated as one of the best in the world according to the Financial Times. The barbecue, or "asado," is an important part of the diet and can be found at almost every celebration and family gathering. Beef, pork, and chicken are prepared in various ways, from cuts like the wide rib, grilled picanha to more traditional dishes like locro, puchero, stews, and the famous tallarin.

Desserts

For those with a sweet tooth, Paraguay offers a variety of delicious desserts, such as mazamorra, a creamy dessert made with corn and milk, cocido, and the classic clerico, a kind of fruit compote.

As for beverages, tereré is an integral part of Paraguayan culture. This refreshing drink is made with cold yerba mate and consumed throughout the day, especially during the hot summer months.
